Professor - Nutrition , Food Futures Program

Dr Dhruti Bal

Dr. Dhruti Bal, Ph.D. (Food Science & Nutrition), is a Food Scientist, Nutrition Researcher and Professor with expertise spanning food industry, academia, product innovation, public health nutrition and community-based programmes. Her work brings together food science and nutrition to create practical solutions for health, food innovation and sustainable utilisation of local resources.

Dr. Dhruti Bal, Ph.D. (Food Science & Nutrition) from the University of Agricultural Sciences, Bangalore, is a Food Scientist, Nutrition Researcher and Professor with extensive experience across the food industry, research, academia and community-based nutrition initiatives. Her doctoral research focused on developing enteral-enhancing formulations from natural sources to support immune status.

Before joining academia, Dr. Bal held leadership roles in the food industry, contributing to nutrition science, product development, functional foods, clean-label innovation, quality systems and product reformulation. Her industry research has resulted in multiple patent applications covering nutrient-dense foods, sustained energy-release cereal products and foods fortified with micronutrients and plant bioactives.

At TDU, she contributes to teaching, mentoring and interdisciplinary research through the Food Futures Programme. Her academic interests include personalised nutrition, metabolic health, sports nutrition and clean-label food innovation. She has also worked with government agencies, academic institutions, industry and communities on nutrition, value addition, entrepreneurship and livelihood initiatives.

An accomplished ultramarathon runner and Garmin Run Club Coach, Dr. Bal is also the Founder of NutriNEEV.

Dr. Dhruti Bal a passionate about understanding how food, nutrition and physical activity shape health across the lifespan. Her academic interests lie at the intersection of food science, nutrition and human physiology, with a particular focus on metabolic health, sports nutrition, physical performance and longevity.

As an ultramarathon runner and running coach, She bring a practical perspective to the relationship between nutrition, exercise and long-term health. Her work explores how nutrition and an active lifestyle can support metabolic resilience, physical performance, functional capacity and healthy ageing.

Her academic work integrates scientific understanding with practical applications in teaching, mentoring and research. Her aim to foster interdisciplinary thinking and encourage students to examine the connections between food, nutrition, physiology and lifestyle in addressing contemporary health challenges.

As per her, nutrition extends beyond improving health or performance at a particular point in life—it is about building the foundation for an active, healthy and fulfilling life for longer.
