May 27, 2026
The Central Council for Research in Ayurvedic Sciences-Central Ayurveda Research Institute (CCRAS-CARI), Bengaluru, and The University of Trans-Disciplinary Health Sciences and Technology (TDU), Bengaluru, are going to jointly release Selected Traditional Food Recipes of Karnataka with Nutritional and Ayurvedic Insights, a first-of-its-kind documentation of Karnataka’s culinary heritage. The book features traditional recipes collected across Karnataka’s agroclimatic zones, combining nutritional analysis with Ayurvedic dietetic principles.
Each recipe includes QR-linked video demonstrations by community contributors, preserving intergenerational food knowledge largely sustained by women. The publication highlights local ingredients, seasonal eating, millet-based foods, and indigenous culinary wisdom, while creating a bridge between traditional knowledge systems and contemporary nutrition science.
The formal launch is scheduled for 29 May, 1230pm, Central Ayurveda Research Institute, Bengaluru in the august presence of Dr Rabinarayan Acharya, DG, CCRAS
